Even picky kids will love this casserole! It's filled with everyone's favorites, like chicken, corn, black beans, egg noodles, Cheddar cheese and salsa!
3 T. unsalted butter
3 cloves garlic, minced
2 T. all-purpose flour
1 c. milk
1 T. chili powder
1 t. cumin
1/8 t. cayenne pepper
1/2 c. salsa
1 c. black beans, drained
1 c. frozen corn
2 c. cooked shredded chicken (rotisserie chicken would be great to use)
12 oz. egg noodles, cooked
2 c. shredded Cheddar cheese, divided
Preheat oven to 350 degrees. Spray a 2 1/2 - 3 quart baking dish with non-stick cooking spray.
In a large saucepan over medium heat, melt the butter. Saute garlic for about 30 seconds. Stir in the flour until fully incorporated.
Very, very slowly, mix in the milk, about a tablespoon of milk at a time, only adding more milk once already added milk is fully incorporated.
Add in chili powder, cumin, cayenne, and salsa; mix in the black beans, frozen corn, shredded chicken, cooked egg noodles, and 1 c. cheddar cheese.
Pour mixture into the prepared baking dish; top with remaining 1 c. cheddar cheese. Bake 20 minutes. Serve warm.
