Even picky kids will love this casserole! It's filled with everyone's favorites, like chicken, corn, black beans, egg noodles, Cheddar cheese and salsa!
Ingredients
- 3 T. unsalted butter
- 3 cloves garlic, minced
- 2 T. all-purpose flour
- 1 c. milk
- 1 T. chili powder
- 1 t. cumin
- 1/8 t. cayenne pepper
- 1/2 c. salsa
- 1 c. black beans, drained
- 1 c. frozen corn
- 2 c. cooked shredded chicken (rotisserie chicken would be great to use)
- 12 oz. egg noodles, cooked
- 2 c. shredded Cheddar cheese, divided
Steps
- Preheat oven to 350 degrees. Spray a 2 1/2 - 3 quart baking dish with non-stick cooking spray.
- In a large saucepan over medium heat, melt the butter. Saute garlic for about 30 seconds. Stir in the flour until fully incorporated.
- Very, very slowly, mix in the milk, about a tablespoon of milk at a time, only adding more milk once already added milk is fully incorporated.
