Need a quick dinner? Make this easy and tasty salmon fillet in a smokey chipotle lime sauce. The lime makes is fresh and light tasting.
2 T. oil
2 limes, juice and zest
1 chipotle chili in adobo, or to taste
2 t. adobo sauce
1/4- 1/2 t. cumin
3 cloves garlic, minced
salt and pepper, to taste
2 lb. salmon fillet
Preheat oven to 400 degrees. Line a baking sheet with aluminum foil.
Puree oil, lime juice and its zest, chipotle chilies, adobo sauce, cumin and garlic in a blender or food processor until smooth.
Place the salmon the baking sheet, pat dry, season with salt and pepper. Spread on the chipotle mixture on top.
Bake until just cooked, about 10-15 minutes.
