Chicken noodle soup is the ultimate comfort food. Make your own homemade easily with this recipe. Make it gluten-free or not, it is totally up to you. Either way, you will love this soup.
1 T. extra virgin olive oil
1 T. butter
2 medium carrots, peeled and sliced
1 stalk celery, sliced
1 shallot or 1/2 small onion, chopped
salt and pepper, to taste
3 cloves garlic, minced
64 oz. chicken broth/stock, plus more for reheating
1 chicken breast, chopped into bite-sized pieces
8 oz. gluten-free spaghetti, broken into pieces or any short-cut pasta
Heat olive oil and butter in a large soup pot over medium heat. Add carrots, celery, and shallot; season with salt and pepper; saute until tender, 10 minutes. Add garlic; saute for 1 minute. Add chicken broth/stock; bring to a boil.
Season chicken with salt and pepper; add to boiling chicken broth along with pasta. Turn heat down to medium; simmer, stirring occasionally until pasta is cooked through.
Taste and adjust salt and pepper. if necessary.
Serve.
Add more chicken broth/stock when reheating, since noodles will continue to soak up broth/stock.
