Description
This wonderful soup is vegan and dairy free. It is healthy and loaded with fiber, protein and vitamins. Garnish with your favorite toppings.
Ingredients
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 red bell pepper, diced
- 4 c. cooked black beans- about 3 cans
- 28 oz. can diced tomatoes
- 4 c. vegetable broth/stock
- Garnish choices:
- diced avocado
- sliced green onion
- chopped tomato
- fresh lime juice
- hot sauce
- crushed tortilla chips
Steps
- In a soup pot over medium heat, saute onion, garlic and red bell pepper in 2 T. water until softened, about 5-6 minutes. Add water as necessary to prevent sticking.
- Add black beans, tomatoes and broth. Bring to a boil; reduce heat to medium-low; simmer 15-20 minutes.
- Using an immersion blender, puree the soup to your preference.
