Description
This potato chip crusted fish is made with the best sea salt and vinegar potato chips ever! They make the fish perfect, with a crunchy, salty, tangy and delicious breading.
Ingredients
1 lb. fresh cod fish, cut into 4 fillets
3 oz. Kettle Brand Bakes Extra Crunchy Sea Salt & Vinegar Potato Chips
1/4 c. plain, non-fat Greek yogurt
2 T. light mayonnaise
salt, to taste
freshly ground black pepper, to taste

Preheat oven to 400 degrees. Line a rimmed baking sheet with parchment paper; spray with non-stick cooking spray.
Season each side of the cod with salt and pepper; place on the prepared baking sheet.
In a small bowl, combine the yogurt and mayonnaise.
Place potato chips into a zip lock bag, seal and crushing chips until they are a breadcrumb like texture.
Spread yogurt mixture all over the top of the cod; cover cod completely and evenly with the crushed chips, pressing gently to coat.
Place in oven and bake 12-15 minutes until fish is cooked through, depending on thickness of fish.
