Now you can enjoy this wonderful dish during the week by making it in the slow cooker. Only 10 minutes prep, put it in the slow cooker and when it's dinnertime, you will delight in the sauce as well as the chicken. Serve it with your favorite pasta.
4 boneless, skinless chicken breasts
1/2 t. salt
1/4 t. pepper
2 t. minced garlic
1 c. sliced mushrooms
1 c. sweet Marsala cooking wine (or chicken stock/broth)
1/2 c. water
1/4 c. cornstarch
fresh parsley, roughly chopped for garnish
Line the slow cooker with a slow cooker liner for easy clean up. Lightly grease the liner with non-stick spray.
Wash chicken and pat dry with paper towels. Season chicken with salt and pepper; place in the bottom of the slow cooker. Top chicken with garlic, mushrooms, and Marsala wine. Cover; cook 5-6 hours on Low.
Transfer the chicken to a platter. Whisk together water and cornstarch until cornstarch is dissolved, then pour it into the slow cooker; stir.
Add the chicken back into the slow cooker, turn heat to High; cover; cook 20 to 30 minutes, until sauce is thickened.
Taste, season with salt and pepper, as needed. Sprinkle with parsley; serve.
