Whether you enjoy this light and refreshing pasta dish as a side or main dish, everyone will love it. It is simple to make and is much better than the boxed variety. Serve with a crusty bread and a salad.
1/4 lb. angel hair pasta or capellini
3/4- 1 t. minced garlic
2 T. olive oil
2 T. pine nuts, toasted golden
2 T. freshly squeezed lemon juice
1 1/2 t. freshly grated lemon zest
1/4 c. minced flat-leafed parsley leaves
2 T. reserved pasta cooking water
favorite grated cheese, if desired
Bring a large saucepan of well salted water to a boil.
In a small saucepan, cook garlic in oil over moderately low heat, stirring, until softened; transfer to a large bowl. Add toasted pine nuts (crushing them slightly with the back of a fork), lemon juice, lemon zest, parsley, salt and pepper, to taste.
Cook pasta in boiling water in a pot until al dente, about 8 minutes; reserve 2 T. pasta cooking water, drain well.
Place pasta back into the pot; add the reserved cooking water to it. Heat to warm the mixture; toss with lemon mixture until absorbed.
Serve pasta warm or at room temperature. Garnish with a little of your favorite grated cheese, if desired.
