Whether you enjoy this light and refreshing pasta dish as a side or main dish, everyone will love it. It is simple to make and is much better than the boxed variety. Serve with a crusty bread and a salad.
Ingredients
- 1/4 lb. angel hair pasta or capellini
- 3/4- 1 t. minced garlic
- 2 T. olive oil
- 2 T. pine nuts, toasted golden
- 2 T. freshly squeezed lemon juice
- 1 1/2 t. freshly grated lemon zest
- 1/4 c. minced flat-leafed parsley leaves
- 2 T. reserved pasta cooking water
- favorite grated cheese, if desired
Steps
- Bring a large saucepan of well salted water to a boil.
- In a small saucepan, cook garlic in oil over moderately low heat, stirring, until softened; transfer to a large bowl. Add toasted pine nuts (crushing them slightly with the back of a fork), lemon juice, lemon zest, parsley, salt and pepper, to taste.
- Cook pasta in boiling water in a pot until al dente, about 8 minutes; reserve 2 T. pasta cooking water, drain well.
