Make a good meal quickly with just a few ingredients. In under 30 minutes, the family can enjoy this dish with pasta, meat and peas garnished with Parmesan cheese. Serve it as the main dish or even as a side dish with a salad and garlic bread.
8 oz. linguine or fettuccine
2 T. olive oil
3 oz. prosciutto, cut into thin strips
1/2 c. dry white wine
2/3 c. half and half
1/2 c. chicken stock/broth ( or 1 c. heavy cream for the half and half and broth)
1 c. frozen peas
salt, to taste
garlic powder, to taste if desired
cayenne pepper or regular freshly ground black pepper, to taste
grated Parmesan cheese, for garnish
Bring a large pot of well salted water to boil. Cook pasta, according to the package directions, about 8-10 minutes. Drain; set aside.
Heat oil over medium-high heat in a large saute pan. Saute prosciutto 3-4 minutes, until it starts to crisp up a bit. Deglaze the pan with the white wine; simmer until the liquid is reduced by half, about 3 minutes. Stir in the half and half, chicken stock/broth, garlic powder, if using, and peas.
Add the drained pasta; carefully toss with the sauce. Cook until slightly thickened, about 3 more minutes. Season with salt and cayenne pepper.
Garnish with grated Parmesan cheese.
