Wow. These crepes make a great meal, whether you make them for breakfast/brunch, lunch or dinner. Just the word crepes sounds complicated, but they are just as easy to prepare as pancakes. They make a truly special meal.
Ingredients
- Crepes:
- 1 c. all-purpose flour
- 2 eggs
- 1/2 c. milk
- 1/2 c. water
- 1/4 t. salt
- 1/8 t. freshly ground black pepper
- 2 T. butter, melted
- Filling:
- 8 ham slices (Black Forest is great)
- 8 cheese slices ( Gruyère, Havarti or Swiss cheese are good)
Steps
- In a large mixing bowl, whisk together the flour and eggs; gradually add in milk and water, stirring to combine. Add the salt, pepper and butter; beat until smooth.
- Heat a lightly oiled griddle or skillet over medium high heat. Pour 1/4 c. batter onto the griddle for each crepe. Tilt the pan with a circular motion so that the batter coats the surface evenly. Cook each crepe for about 2 minutes, until the bottom is light brown. Loosen with a spatula, turn and cook the other side.
- When all crepes are finished, place 1 ham slice and 1 cheese slice into the center of each crepe, fold sides in and then roll up.
