Wow. These crepes make a great meal, whether you make them for breakfast/brunch, lunch or dinner. Just the word crepes sounds complicated, but they are just as easy to prepare as pancakes. They make a truly special meal.
Crepes:
1 c. all-purpose flour
2 eggs
1/2 c. milk
1/2 c. water
1/4 t. salt
1/8 t. freshly ground black pepper
2 T. butter, melted
Filling:
8 ham slices (Black Forest is great)
8 cheese slices ( Gruyère, Havarti or Swiss cheese are good)
In a large mixing bowl, whisk together the flour and eggs; gradually add in milk and water, stirring to combine. Add the salt, pepper and butter; beat until smooth.
Heat a lightly oiled griddle or skillet over medium high heat. Pour 1/4 c. batter onto the griddle for each crepe. Tilt the pan with a circular motion so that the batter coats the surface evenly. Cook each crepe for about 2 minutes, until the bottom is light brown. Loosen with a spatula, turn and cook the other side.
When all crepes are finished, place 1 ham slice and 1 cheese slice into the center of each crepe, fold sides in and then roll up.
Place rolled crepes back on hot pan, cook until crispy on each side and cheese is slightly melted.
Makes 8 crepes.
