Description
Your family and guests won't be able to hold themselves back when eating this breakfast/ brunch dish. It has wonderful hot Italian sausage, bell peppers, fresh spinach, eggs and cheese. Who said that it can't be dinner as well?
Ingredients
- 8 oz. package hot Italian sausage
- 1 medium sweet onion, thinly sliced
- 1 medium red bell pepper, seeded and sliced
- 1 yellow bell pepper, seeded and sliced
- 2 c. fresh spinach, roughly chopped
- salt, to taste
- freshly ground black pepper, to taste
- 2 1/2 c. shredded sharp Cheddar cheese, divided
- 8 large eggs
- 1 1/2 c. milk
Steps
- Preheat oven to 325 degrees. Lightly grease a 9 x 13 inch casserole dish.
- Remove and discard casings from sausage.
- Cook meat in a large skillet over medium heat, stirring until sausage crumbles. When the sausage is no longer pink, drain off fat. Add onions and peppers; saute until tender, about 3 - 4 minutes. Add spinach; cook 2 minutes. Season with salt and pepper, to taste.
