Your family and guests won't be able to hold themselves back when eating this breakfast/ brunch dish. It has wonderful hot Italian sausage, bell peppers, fresh spinach, eggs and cheese. Who said that it can't be dinner as well?
8 oz. package hot Italian sausage
1 medium sweet onion, thinly sliced
1 medium red bell pepper, seeded and sliced
1 yellow bell pepper, seeded and sliced
2 c. fresh spinach, roughly chopped
salt, to taste
freshly ground black pepper, to taste
2 1/2 c. shredded sharp Cheddar cheese, divided
8 large eggs
1 1/2 c. milk
Preheat oven to 325 degrees. Lightly grease a 9 x 13 inch casserole dish.
Remove and discard casings from sausage.
Cook meat in a large skillet over medium heat, stirring until sausage crumbles. When the sausage is no longer pink, drain off fat. Add onions and peppers; saute until tender, about 3 - 4 minutes. Add spinach; cook 2 minutes. Season with salt and pepper, to taste.
Pour the sausage mixture into the prepared casserole dish. Sprinkle in half of the Cheddar cheese.
In a medium bowl, whisk together the eggs and milk. Pour the egg/milk mixture over the sausage mixture; sprinkle on the remaining cheese.
Bake 45 minutes or until bubbly and hot.
Serve.
