Cheddar Crusted Shepherd's Pie

Description

Warm you and your family up with a comforting and satisfying Shepherd's pie. It has an extra special Cheddar cheese crust on top that makes it an even more wonderful dish.

Ingredients

5 c. mashed, boiled Yukon potatoes, left over mashed potatoes or use instant potatoes
1/2 c. sour cream
3 oz. cream cheese
1 egg yolk
1/2- 1 t. kosher salt, or to taste
1/2 t. freshly ground black pepper
1 T. olive oil
2 garlic cloves, minced
1 1/2 lb. ground meat like lamb, beef, beef and pork mixture, or turkey
16 oz. can diced tomatoes with juice
1 small bag frozen vegetable medley (carrots, peas, onion, and corn)
1 c. stout beer
1 beef bouillon cube
several dashes of Worcestershire sauce
1 T. cornstarch, mixed with a little water to make a paste
1 t. smoked paprika
1 1/2 c. sharp shredded Cheddar cheese, divided
2 T. fresh chopped chives

Wash potatoes, boil potatoes until tender enough to mash. Prepare mashed potatoes using your favorite recipe.

Add sour cream, cream cheese, cheddar cheese, chives, egg yolk, salt, and pepper; stir until smooth.

Heat oil in skillet over medium-high heat. Add ground meat; cook until browned; add garlic cloves. Cook 1 minute. Discard any excess grease; season with more salt and pepper. Add Worcestershire sauce, tomatoes with their liquid and frozen vegetables; cook 5 - 10 minutes.

Preheat oven to 350 degrees. Grease a 9 x 13 inch casserole dish.

While meat mixture is cooking, in a small saucepan, heat beer and add beef bouillon cube, stir. Bring up to a simmer; add cornstarch mixture; stir well. Add this to meat mixture; simmer until thickened.

Pour meat mixture into the prepared casserole dish. Spoon mashed potatoes over this, making sure that the potatoes cover all of the meat mixture. Top with 1 c. cheese; sprinkle smoked paprika over the casserole. Cover with aluminum foil.

Bake covered until hot. If the ingredients are still hot when it goes in the oven, bake 25-30 minutes. If the casserole ingredients are cold, bake for about 45 minutes.

Uncover; place under the broiler until cheese is bubbly and golden, about 2 minutes.

Serve with chopped chives as garnish.
