Bake a wonderful quiche filled with eggs, cream, roasted green chilies and Mexican cheese in a store bought or homemade pie crust. Have it ready in no time for breakfast/brunch, lunch or even dinner.
6 eggs
1 c. heavy cream
1/2 t. kosher salt
1/4 t. freshly ground black pepper
3/4 c. canned chopped roasted green chiles
1 c. shredded Mexican cheese blend or shredded Monterrey Jack cheese
1 prepared pie crust
Preheat oven to 425 degrees.
Place the crust in a deep pie plate or round 9 inch pan. Prick the crust with a fork several times.
Whisk together eggs, cream, salt, and pepper.
Spread the green chiles across the bottom of the crust; cover with cheese.
Pour the egg mixture over the cheese and chiles.
Bake 15 minutes. Reduce heat to 300 degrees; bake another 30-40 minutes, until quiche is puffy and lightly browned. Remove from oven.
Let cool 5-10 minutes before serving.
