Make your family a side dish for dinner that doesn't come from a box, isn't processed and has ingredients that you can pronounce. It is a spectacular side dish to serve with many meals, especially Mexican inspired ones.
2 cu long grain white rice
1 t. ground cumin
1 t. kosher salt
4 c. boiling water
2 T. lime juice
1/4 c. chopped cilantro
additional lime wedges, for serving, if desired
Preheat the oven to 425 degrees. Lightly grease a 9 x 13 inch baking pan with butter, oil, or non-stick cooking spray.
Combine the rice, cumin, and salt in the pan; stir to mix the spices; spread in an even layer; pour in the boiling water and lime juice.
Cover the pan tightly with heavy duty aluminum foil, sealing edges. Bake 20 minutes.
Remove from the oven; stir. If most of the water has not been absorbed, bake uncovered for an additional 3-5 minutes.
Remove from the oven; let rest 3-5 minutes.
Fluff with a fork; lightly stir in the cilantro.
Serve with additional lime wedges, if desired.
6-8 servings.
