Description
Make your family a side dish for dinner that doesn't come from a box, isn't processed and has ingredients that you can pronounce. It is a spectacular side dish to serve with many meals, especially Mexican inspired ones.
Ingredients
- 2 cu long grain white rice
- 1 t. ground cumin
- 1 t. kosher salt
- 4 c. boiling water
- 2 T. lime juice
- 1/4 c. chopped cilantro
- additional lime wedges, for serving, if desired
Steps
- Preheat the oven to 425 degrees. Lightly grease a 9 x 13 inch baking pan with butter, oil, or non-stick cooking spray.
- Combine the rice, cumin, and salt in the pan; stir to mix the spices; spread in an even layer; pour in the boiling water and lime juice.
- Cover the pan tightly with heavy duty aluminum foil, sealing edges. Bake 20 minutes.
