Pancakes:
1⅓ c. all-purpose flour
1¼ t. baking powder
4 T. packed brown sugar
2 large eggs
1 c. buttermilk or coconut milk
4 T. melted butter
1 t. vanilla extract
butter, for the griddle
Bacon Maple Butter:
6 T. butter
⅓ c. pure maple syrup
3-4 slices crisp bacon, baked or fried, cut into small bits
Preheat oven to 225 degrees.
Pancakes:
In a large bowl, add flour, baking powder, and brown sugar; whisk together until well mixed.
Add eggs, milk, melted butter and vanilla extract; whisk until batter just comes together. Leave the lumps, it isn't necessary to have a smooth batter.
Heat a griddle or non-stick skillet over medium heat; melt the extra butter.
Pour ¼ cup batter onto the griddle in a circular pattern; allow to sit until bubbles form and bottom is golden brown and crisp.
Flip pancake over and cook until golden brown and crisp. Remove pancake and place in the warm oven; repeat process until all pancakes are done.
Bacon Maple Butter:
Add butter and maple syrup to a microwave safe container; melt together. Add some bacon bits to the syrup, leaving the rest for garnish.
Place pancakes on individual plates; add bacon bits to the top of the pancakes. Pour syrup mixture over pancakes.
Serve.
Makes 5-6 pancakes.
