This one pot dish will satisfy your family's tastes. It is full of chicken, broccoli, rice and cheese. The cook will love it when it is time to clean up because it's all made in one pot!
1 T. olive oil
1 onion, chopped
2 chicken breasts, cut into small cubes or strips
4-5 cloves garlic, minced
¾ c. rice
10 oz. can cream of chicken soup
2 - 3 c. chicken stock/broth
2 c. broccoli florets
1 c. Cheddar cheese, divided
salt, to taste
freshly ground black pepper, to taste
Wash chicken, pat dry with paper towels, and cut into small cubes or strips.
Wash broccoli, cut into florets. Peel onion and chop. Peel garlic cloves and mince.
Heat olive oil in a large skillet or dutch oven; add chopped onion, garlic and chicken. Cook on medium heat for a few minutes until chicken starts to brown. Season with salt and pepper, to taste.
Add rice, soup and chicken stock/broth. Start with 2 c. chicken stock/broth, adding more if needed, until rice is fully cooked. Cook over medium heat until rice is fully cooked, about 15 minutes. Adjust seasoning as necessary.
Add 1/2 c. cheese and the broccoli florets; cook 2 minutes, until broccoli softens a little. Sprinkle remaining cheese over the top; place skillet under broiler for several minutes, just until it melts and starts to brown.
