Instead of eating mayonnaise, enjoy this healthy homemade condiment. Use in salads, on sandwiches, as a dip or a dressing. It's popular in Mexico, Central America, Spain and the southern United States.
1 large avocado
juice from 1⁄2 lemon
1⁄4 t. salt, or to taste
pinch cayenne pepper, optional
1⁄4 c. extra virgin olive oil
Wash the avocado; cut it in half, remove and discard the pit. Scoop out the flesh; place flesh in the blender.
Add lemon juice, salt, and cayenne pepper, (if using) and blend together.
With blender still running, add in olive oil slowly. Stop the blender several times to redistribute ingredients. Puree to a smooth creamy mixture.
Makes 3/4 cup.
