Description
Instead of eating mayonnaise, enjoy this healthy homemade condiment. Use in salads, on sandwiches, as a dip or a dressing. It's popular in Mexico, Central America, Spain and the southern United States.
Ingredients
- 1 large avocado
- juice from 1⁄2 lemon
- 1⁄4 t. salt, or to taste
- pinch cayenne pepper, optional
- 1⁄4 c. extra virgin olive oil
Steps
- Wash the avocado; cut it in half, remove and discard the pit. Scoop out the flesh; place flesh in the blender.
- Add lemon juice, salt, and cayenne pepper, (if using) and blend together.
- With blender still running, add in olive oil slowly. Stop the blender several times to redistribute ingredients. Puree to a smooth creamy mixture.
