Pico de Gallo is so simple to make and is so versatile. Enjoy as an appetizer with your favorite tortillas or corn chips, put it in tacos or burritos, or serve it as a side dish.
2 tomatoes, diced
1 large red onion, finely chopped
1/2 fresh jalapeno pepper, washed, seeded and chopped, or to taste
3 sprigs fresh cilantro, finely chopped
1 green onion, finely chopped
1/2 t. garlic powder or 1 garlic clove, minced
1/8 t. salt
1/8 t. freshly ground black pepper
freshly squeezed lime juice, if desired
In a medium bowl, combine tomato, onion, jalapeno pepper, cilantro and green onion. Season with garlic powder, salt and pepper. If desired, add some freshly squeezed lime juice. Stir.
Refrigerate for 30 minutes.
Serve.
