Meatloaf is an economical dish to serve for your family and is a family favorite for many. When it is made in the slow cooker, you put it in the crock and take the worry out of cooking. It's a tender, juicy and flavorful meal for busy families.
2 lb. lean ground beef
1/2 lb. Italian turkey sausage, casings removed
1 large onion, peeled and finely chopped or grated
4 large carrots, halved and divided
1 celery stalk, finely chopped
2 eggs
1 1/2 c. ketchup, divided
3/4 c. seasoned breadcrumbs
1/4 c. light brown sugar
2 T. Worcestershire sauce
2 t. salt
1 t. garlic powder, divided
1 t. pepper
1/2 t. yellow mustard
Line the crock of a 3-5 quart slow cooker with a slow cooker liner for easy clean up.
Wash carrots, cut off ends, slice in halves. Place 6 carrot halves in the bottom of the slow cooker. Grate the remaining carrots.
Wash celery, chop off ends, finely chop celery.
Combine beef, sausage, onion, grated carrots, chopped celery, 3/4 c. ketchup, breadcrumbs, eggs, 1/2 t. garlic powder, Worcestershire sauce, salt and pepper in a large bowl. Mix, making sure everything is well incorporated.
Form meat mixture into a loaf; gently place loaf over carrots in the slow cooker.
In the same bowl, mix sugar, mustard, remaining ketchup and 1/2 t. garlic powder together. Sprinkle over the top of the loaf; cover; cook on Low 8 hours, or on High 4 hours.
Let sit 15 minutes after turning off heat and drain off excess liquid.
Serve warm.
