Description
This casserole makes a wonderful breakfast or brunch, but it would be a great dinner as well. Add more veggies if you would like and tailor it to your own taste. It is a great casserole for when company comes.
Ingredients
- 3 c. frozen shredded hash brown potatoes, the O'Brien type potatoes are great
- 3/4 c. shredded sharp Cheddar cheese
- 1 c. cubed or sliced fully cooked ham or Canadian bacon
- 1/4 c. chopped green onions
- 4 eggs
- 10 oz. canned evaporated milk or regular milk
- 1/4 t. pepper
- 1/4 t. salt
Steps
- Place potatoes in a 8 inch greased baking dish. Sprinkle with cheese, ham and onions.
- Whisk together eggs, milk, pepper and salt; pour over potato mixture. Cover; refrigerate several hours or overnight.
- Remove from refrigerator 30 minutes before baking.
