This casserole makes a wonderful breakfast or brunch, but it would be a great dinner as well. Add more veggies if you would like and tailor it to your own taste. It is a great casserole for when company comes.
3 c. frozen shredded hash brown potatoes, the O'Brien type potatoes are great
3/4 c. shredded sharp Cheddar cheese
1 c. cubed or sliced fully cooked ham or Canadian bacon
1/4 c. chopped green onions
4 eggs
10 oz. canned evaporated milk or regular milk
1/4 t. pepper
1/4 t. salt
Place potatoes in a 8 inch greased baking dish. Sprinkle with cheese, ham and onions.
Whisk together eggs, milk, pepper and salt; pour over potato mixture. Cover; refrigerate several hours or overnight.
Remove from refrigerator 30 minutes before baking.
Preheat oven to 350 degrees.
Bake, uncovered, 60 minutes or until a knife inserted in center comes out clean.
