This will be the easiest and best corned beef and cabbage that you will ever make. All you need to prepare are the veggies, put it all in the slow cooker and go about your normal day.
4-5 large carrots
10 baby red potatoes
1 onion
4 c. water or chicken stock/broth
4 lb. corned beef brisket with spice packet
6 oz. beer, optional (DO NOT use Guinness Extra Stout)
1/2 head cabbage
Wash, peel and cut carrots into bite sized pieces. Wash potatoes and cut into halves. Peel onion and cut into quarters.
Put a slow cooker liner in the crock of the slow cooker for easy clean up.
Place the carrots, potatoes, and onion into the bottom of the crock; pour in the stock; place the brisket on top of the vegetables; pour the beer over the brisket. Sprinkle on the spices from the packet; cover; set the cooker on Low.
Cook about 8 hours.
Wash cabbage and coarsely chop.
An hour before serving, stir in the cabbage; cook 1 hour.
