This is a wonderful clam chowder for the crockpot. It's easy and great tasting. Serve it with your choice of crackers, French bread or better yet, serve it in a sourdough bread bowl!
4 - 6 1/2 oz. cans minced clams, with juice
1/2 lb. salt pork or bacon, diced
1 c. onion
6 - 8 medium potatoes
3 c. water
3 1/2 t. salt
1/4 t. freshly ground black pepper
4 c. heavy cream, half and half cream or milk
3 - 4 T. cornstarch (omit if using heavy cream)
chopped fresh parsley or green onion, for garnish
Wash potatoes, peel (if desired) and cube. Peel and chop onion.
Line a crockpot with a crockpot liner for easy clean up.
Cut clams into bite-sized pieces.
In a skillet, saute salt pork or bacon and onion until golden brown; drain.
Place clams with their juice, onions and cooked pork into the crockpot. Add potatoes, water, salt and pepper.
Cover; cook on High 3 - 4 hours or until vegetables are tender.
During the last hour of cooking, combine 1 c. milk or cream with the cornstarch; stir. Add cornstarch mixture and the remaining milk or cream and stir well; heat through.
Garnish each serving with a little chopped parsley or green onion; serve with oyster or saltine crackers or sourdough or crusty French bread.
