This is a delicious casserole that is the perfect dish to serve dinner guests. It's always nice to have a great Italian casserole in your recipes box. This one is definitely a keeper.
16 oz. spaghetti noodles
2 lb. jar marinara sauce
1 lb. ground beef or Italian sausage
1/2 c. chopped onion
8 oz. cream cheese, softened
1/4 c. sour cream
1 c. cottage cheese
2/3 cup Parmesan cheese
2 c. shredded cheese, your choice
Preheat oven to 350 degrees. Grease a 9 X 13 pan or two 8 X 8 pans.
Boil pasta according to package directions; drain; stir with a drizzle of olive oil to prevent sticking together.
In a stand mixer, combine cream cheese, cottage cheese, and sour cream; mix; set aside.
Brown ground beef and onion until no longer pink. Drain and discard grease. Pour in a jar of marinara sauce; stir.
Layer half of the cooked pasta in the bottom of the greased pan; top with 2/3 c. shredded Parmesan cheese; add the cream cheese mixture; top with remaining pasta. Spread marinara sauce with ground beef over the top.
Bake 30 minutes. Sprinkle on 2 c. cheese; return to oven for 15 minutes.
Let cool 15 minutes before slicing.
Serve.
*To freeze, double wrap the casserole in heavy duty foil with baking instructions written on top with a marker. Thaw overnight in the refrigerator. Top with cheese the last 15 minutes as directed.
