Plain rice becomes totally boring once you have tasted this wonderful cilantro and lime rice. The citrus flavors or the lime and lemon juices pairs wonderfully with the cilantro. It elevates your whole meal to the next level. Enjoy it as a side dish with
1 c. basmati rice (extra long grain rice)
2 T. butter, divided
1 bay leaf
2 c. water
1 t. salt
2 T. fresh chopped cilantro
1 1/2 T. freshly squeezed lime juice from about 1/2 of a large lime
1 T. freshly squeezed lemon juice
Set a medium sized heavy pot over medium heat; add 1 T. butter, bay leaf and rice. Saute rice for about 2 minutes, stirring constantly.
Pour in water and salt; bring to a boil. When boiling, cover and reduce heat to a simmer. Simmer about 15-17 minutes, until water is absorbed and rice is fluffy. Remove from heat.
Stir in remaining butter, cilantro, lime and lemon juice. Stir until combined.
Remove the bay leaf.
Serve.
