Make this delicious lasagna with a twist. These roll ups make a quick dinner that can be ready in less than an hour. They are filled with a creamy Ricotta, Mozzarella and Parmesan cheeses and chicken filling and then are topped with Alfredo sauce. Yum!
12 lasagna noodles
2 c. Alfredo sauce, store bought or homemade, divided
15 oz. Ricotta cheese
1 egg
½ c. Parmesan cheese
2 c. shredded Mozzarella cheese, divided
1 T. Italian seasoning
1 t. garlic powder
¼ t. pepper
½ t. salt
2 c. shredded cooked chicken (rotisserie chicken or left over chicken works great)
Preheat oven to 350 degrees.
Cook lasagna noodles according to package directions in well salted boiling water, about 8-10 minutes
Spread 1 c. Alfredo sauce on the bottom of a 9 x 13 inch pan.
Mix egg and Ricotta together in a medium sized bowl; mix in Parmesan and 1 c. Mozzarella cheese; stir. Add Italian seasoning, garlic powder, pepper, and salt; stir. Add in shredded chicken; mix everything together.
Put ¼ c. cheese/chicken mixture on each lasagna noodle; roll up lasagna noodle. Place roll into prepared pan. Repeat with additional mixture and noodles.
Spread remaining Alfredo sauce over the top of roll ups. Top with additional Mozzarella cheese.
Bake 15 minutes.
