Description

This quick and easy casserole is full of flavorful goodness. Chicken, crushed Doritos, cheese, cream of chicken soup, Ro-Tel tomatoes and spices make it irresistible!

Ingredients

• 11 oz. Nacho Cheese Doritos
• 2 c. cooked shredded chicken (rotisserie works great)
• 1 can cream chicken soup
• 1 c. sour cream
• 8 oz. grated Cheddar cheese
• 1 can Ro*Tel tomatoes and chiles
• 1 t. cumin
• 1 t. chili powder
• 1/2 c. pico de gallo

Steps

1. Preheat oven to 350 degrees.
2. In a medium bowl, stir together chicken, soup, sour cream, 4 oz. Cheddar cheese, Ro*Tel, cumin, and chili powder.
3. Crush Doritos; add half of them to the bottom of a 9 x 13 baking dish. Top with the chicken mixture. Add the remaining crushed Doritos over the top of the chicken. Sprinkle the remaining cheese on top.
