A frittata is an Italian dish with eggs and is like a crustless quiche or an omelette, which makes it very versatile. It cooks quickly and makes a light meal for dinner, but can be for breakfast/ brunch as well.
12-16 oz. lean ground beef (ground pork or ground turkey)
¼ t. salt, divided
¼ t. black pepper, divided
¼ t. garlic powder, divided
1 T. olive oil
1 medium-large onion, chopped
10 large eggs
3 T. milk
4 oz. Cheddar cheese, shredded, divided
**You could also add: bacon, sautéed mushrooms, sliced/diced tomatoes, bell peppers.
Preheat oven to 400 degrees.
Grease a 9 inch deep dish or 10 inch pie pan with butter or non-stick cooking spray.
Brown hamburger with a few dashes of salt, pepper and garlic powder. Discard grease.
Heat olive oil over medium heat; sauté onion with a dash of salt and pepper until translucent.
Beat together eggs, milk, ½ of the shredded Cheddar cheese, and 1/4 t. salt, 1/4 t. pepper, and 1/4 t. garlic powder.
Evenly distribute the browned hamburger on the bottom of the pie pan, then top with sautéed onions. Pour the egg mixture over the top; top with remaining Cheddar cheese.
Bake 15-20 minutes until set. Adjust cooking time for different size pans.
