This simple to make, delicious casserole will get two thumbs up from everyone when you serve it. It's perfect for an easy weeknight dinner or for entertaining guests. It has all of the flavors of the classic chicken cordon bleu with a crispy topping that
2 T. olive oil
1/2 onion, diced
2 T. flour
1 c. chicken stock
1/2 c. milk
2 c. shredded rotisserie chicken
1 c. chopped ham (or bacon)
2 c. cooked rice
1 1/2 c. shredded Swiss cheese (6 oz.), divided (low-fat is fine)
3/4 c. Italian style bread crumbs or Panko
1 T. melted butter
chopped fresh parsley for garnish, if desired
Preheat oven to 400 degrees. Lightly grease a two inch deep, 10 inch round baking dish with olive oil; set aside.
In a 10 inch skillet, heat olive oil over medium-high heat; add onion; cook until tender and translucent, stirring occasionally; add flour; stir to make a roux, cooking 1 - 2 minutes or until lightly golden. Gradually whisk in stock, followed by milk; simmer until slightly thickened into a gravy.
In a large bowl, mix chicken, gravy, ham, rice and 1 c. cheese. Spread evenly in baking dish.
In another bowl, mix bread crumbs and butter to coat well. Add remaining cheese. Top casserole with bread crumb mixture; bake about 20 minutes or until top is crisp and golden and casserole is bubbling.
Garnish with chopped parsley, if desired.
