This is a healthy, fun and yummy twist on breakfast oatmeal and creme brûlée dessert. It seems like it wouldn't be healthy, but it is no less healthy than traditional oatmeal. It's a breakfast masterpiece, with creamy oatmeal on the inside, with a fun, cr
2 c. milk, regular milk, almond, coconut or soy milk
1 c. old-fashioned rolled oats
1/2 t. cinnamon
1/4 t. vanilla extract
4 t. regular granulated white sugar
cream or half and half, for garnish, if desired
Heat milk in a saucepan until little bubbles form around the edges; add oats. Cook gently, stirring occasionally, for about 5 minutes until the oatmeal is thickened.
Stir in cinnamon and vanilla; spoon into 2 serving bowls. Smooth out the top of each bowl with the back of a spoon to form a flat surface for the sugar. Evenly sprinkle 2 t. sugar over each bowl.
Use a kitchen torch to caramelize the sugar, moving the flame in circles as the sugar turns color. Continue heating until the entire surface is browned and small black spots begin to form. If you don't have a kitchen torch, it can be done under the broiler, up close to the flame, but a kitchen torch works much better.
Serve hot with a little cream.
