Instead of crab cakes, try these crab bombs. They are easy to make at home and less expensive too. Serve them as an appetizer or the main dish.
1 lb. crabmeat
1 egg, beaten
1 c. Ritz crackers, crushed
1 t. yellow mustard
2 T. fresh lemon juice
2 T. fresh parsley, chopped
1 t. Old Bay Seasoning
1 T. Worcestershire sauce
melted butter
Preheat oven to 350 degrees.
Place crabmeat in a mixing bowl, picking any shell fragments out; add crushed crackers, Old Bay Seasoning, and parsley.
In a separate bowl, combine egg, mustard, lemon juice and Worcestershire sauce; whip with a whisk until smooth.
Pour egg mixture over the crabmeat and crackers; gently mix, being careful not to break up large lumps of crabmeat.
Mold into golfball sized balls. Place on a cookie sheet. Bake 30 minutes.
Drizzle with melted butter; allow to cool.
