Lasagna for everyone, including non-meat eaters!
2 1/2 jars of spaghetti sauce
1 lb. broccoli, washed, drained, cut into pieces
1/2 lb. spinach, cleaned and well drained
mushrooms, cleaned and well drained
1 medium onion, chopped
1 large carton cottage or ricotta cheese
1 egg
Parmesan cheese
Lasagna noodles
basil
parsley
garlic powder
rosemary
Spread a layer of spaghetti sauce in the bottom of an extra, extra deep 9x13 inch pan, then a layer of cooked noodles. Mix together broccoli, spinach, mushrooms, and onion. Spread over noodles. Mix cottage or ricotta cheese, egg, and 1/4 cup Parmesan cheese and add in spices to taste. Spread over vegetable layer and then add another layer of noodles. Spread remaining spaghetti sauce, sprinkle Parmesan cheese on top. Cover tightly with foil and bake about 45 minutes at 325 degrees. Remove the foil and bake another 15 minutes. Let stand 10 minutes before serving.
