One-Pot Swedish Meatball Pasta

Description

There is no need to buy that boxed dinner when you can easily make a quick meal from scratch. You will be in control of all of the ingredients, it is much better for you, and it tastes much better!

Ingredients

1 lb. ground beef (or any ground meat like pork, turkey, etc. or mixture)
½ c. seasoned breadcrumbs
½ onion, finely minced
1 egg
½ T. salt
½ T. pepper

2 T. canola oil

2 c. beef stock/broth
2 c. milk
½ T. salt
½ T. pepper
1 T. Worcestershire sauce

4 c. egg noodles
1 c. shredded Parmesan cheese
½ c. freshly chopped parsley

In a large bowl, combine ground beef, breadcrumbs, onion, egg, salt, and pepper, mixing until evenly combined.

Heat oil in a pot over medium-high heat.

Make/roll meatballs the size of golf balls from the meat mixture. Place them into the pot; cook 1 minute; flip the meatballs.

Add the beef stock/broth, milk, salt, pepper, and Worcestershire sauce; stir. Bring to a boil; add egg noodles; stir constantly until the pasta is cooked and the liquid has reduced to a sauce that coats the noodles, about 7-8 minutes. Add the Parmesan cheese and parsley, stirring until the cheese is melted.

Serve.
