Description
This meal is quick and tasty. It can be prepared in under 30 minutes. Serve with cooked rice or egg noodles.
Ingredients
- 2 red bell peppers, or any color
- 1 yellow onion
- 1 zucchini
- 1 lb. Italian chicken sausage, cut into bite-sized chunks
- 1 T. olive oil, or more if necessary
- 1 c. Italian salad dressing
Steps
- Wash peppers and zucchini. Cut tops off of the peppers and the membranes; discard. Cut peppers into bite sized pieces. Wash zucchini, peel or leave peeling on. Cut into 1/4 inch slices. Peel onion and cut onion into bite sized pieces.
- Heat oil over medium-high heat. Add sausage chunks; cook until the sausage is heated through (if pre-cooked, they just need to be heated to 165 degrees). Remove sausage from the pan; add a bit more oil, if necessary. Cook veggies about 10 minutes, or until tender. Add cooked sausage back to the pan. Stir in Italian dressing; cook for a few minutes.
- Serve over rice or egg noodles, if desired.
