This delicious chicken cooks in no time because the chicken is cut into bite sized pieces prior to cooking. It makes a quick meal for those busy weeknights when time is so precious. Serve with your favorite sides.
6 boneless, skinless chicken breasts, diced
1 c. mayonnaise or plain Greek yogurt
1 c. freshly shredded Parmesan cheese, divided
1 t. seasoned salt
1/2 t. freshly ground black pepper
1 t. garlic powder
Preheat oven to 375 degrees.
Wash chicken and pat dry with paper towels. Dice chicken into bite sized pieces.
Place chicken in a greased 9 x 13 baking dish.
In a small bowl, combine the mayonnaise/yogurt, 3/4 c. Parmesan cheese, salt, pepper, and garlic powder. Spread mixture evenly over the top of the chicken. Sprinkle the remaining Parmesan cheese on top of mayonnaise mixture.
Bake about 30-35 minutes.
Serve chicken over rice, your favorite pasta, or potatoes. Those boxed pasta sides are perfect to make and serve with this chicken.
If chicken is a little soupy, use a large slotted spoon to drain when serving.
