The perfect burger is easy to make and is so delicious. It's juicy and full of flavor. To achieve the perfect burger, avoid some common mistakes like pressing down on the burger while cooking, flipping the burger over more than one time, or using ground m
1½ lb. ground chuck (80/20- for just the right amount of fat for flavor and juiciness)
Kosher salt
freshly ground black pepper
canola oil
4 slices white American cheese, thinly sliced
4 slices white cheddar cheese, thinly sliced
Toppings:
beef steak tomatoes, sliced
dill pickles slices
red onion slices
romaine lettuce
4 soft burger buns with sesame seeds
potato chips (Lay's provide the perfect crunch on top of these burgers)
Dijon mustard
regular mustard
horseradish mustard
ketchup
4 six inch wooden skewers
Form ground chuck into 4 equal sized patties (6 oz. each) no more than 3/4 inch thick.
Use your thumb to make a deep depression in the center of each burger so the burger doesn't puff up and bulge in the center while cooking.
Liberally season the outside of the burger with salt and pepper. DON'T season the meat mixture or add herbs or onions or garlic to it. You are not making meatloaf.
Heat a cast iron skillet or griddle over high heat until it begins to slightly smoke. Now add a few teaspoons of canola oil. Put the burgers in the skillet/griddle and Do Not touch until a crust has formed on the bottom,which will take at least 3 minutes.When a crust has formed, use a metal spatula and flip over, continuing to cook until a crust has formed on the bottom and cooked to desired doneness (MEDIUM) another 4 minutes. DO NOT PRESS ON THE BURGER-that releases all of the wonderful juiciness and flavor!
Place 1 slice of each cheese on each burger (2 total on each burger), then add a few splashes of water and IMMEDIATELY cover the pan tightly. Cook until cheese is completely melted, about 30 seconds. This is the method that best melts the cheese!
A soft bun with sesame seeds is fantastic, if you like sesame seeds. Lightly toast the bun, if desired, then place the burger on the bottom of the bun. Add desired toppings and a few potato chips. Place top of bun on top, then place a skewer through the burger to serve.
