Ground chicken and turkey meatballs are so much healthier than ground beef meatballs. By using the perfect additions, they won't be tasteless or dry and are really delicious.
1 lb. ground chicken
1 egg, lightly beaten
1/4 c. roasted garlic
light cream cheese
1/4 c. grated Parmesan cheese
1 T. dry bread crumbs
1/2 - 1 t. crushed red pepper flakes
1/2 - 1 T. Italian seasoning
1 T. garlic powder
1 1/2 T. vegetable oil
1 t. salt
1 t. freshly ground black pepper
**Add a little grated or finely chopped onion for even more taste.
Preheat oven to 450 degrees. Line a rimmed baking sheet with foil; spray foil with non-stick cooking spray.
Combine the meat, egg, cream cheese, Parmesan cheese, bread crumbs, red pepper flakes, Italian seasoning, garlic powder, vegetable oil, salt, and pepper in a large bowl; mix well. Form mixture into 20 meatballs; place on the prepared pan.
Bake in center of the oven until juices run clear, about 17 - 18 minutes.
Makes 20 meatballs -5 servings.
