Description

This will soon become one of your favorite Italian dishes! It is so easy to prepare and has a wonderful combination of flavors. It is so outstanding and has such a beautiful presentation that you can serve it to guests and at dinner parties.

Ingredients

  • 8 boneless skinless chicken breasts (half breasts)
  • 1⁄2 c. sun-dried tomato, packed in oil
  • 1⁄2 c. basil pesto
  • 8 slices ham or prosciutto
  • 2 T. olive oil
  • 1⁄2 c. white wine
  • 1⁄2 c. tomato sauce
  • 1 T. freshly chopped basil
  • salt, to taste
  • pepper, to taste

Steps

  1. Wash chicken and pat dry with paper towels. Split or butterfly the chicken breasts.
  2. On each chicken piece, layer the prosciutto, 1 T. pesto, and 1 T. sun dried tomatoes. Roll up the chicken breasts while tucking in the sides to completely envelop the filling.
  3. Add olive oil to a deep skillet; brown the rolled up chicken on both sides; add the wine, tomato sauce and the basil. Season with salt and pepper. Simmer 30 minutes.
