This will soon become one of your favorite Italian dishes! It is so easy to prepare and has a wonderful combination of flavors. It is so outstanding and has such a beautiful presentation that you can serve it to guests and at dinner parties.
8 boneless skinless chicken breasts (half breasts)
1⁄2 c. sun-dried tomato, packed in oil
1⁄2 c. basil pesto
8 slices ham or prosciutto
2 T. olive oil
1⁄2 c. white wine
1⁄2 c. tomato sauce
1 T. freshly chopped basil
salt, to taste
pepper, to taste
Wash chicken and pat dry with paper towels. Split or butterfly the chicken breasts.
On each chicken piece, layer the prosciutto, 1 T. pesto, and 1 T. sun dried tomatoes. Roll up the chicken breasts while tucking in the sides to completely envelop the filling.
Add olive oil to a deep skillet; brown the rolled up chicken on both sides; add the wine, tomato sauce and the basil. Season with salt and pepper. Simmer 30 minutes.
Serve with your favorite pasta, rice or polenta.
