Almond, Berry and Chicken Spinach Salad

This gorgeous salad makes a perfect lunch in the spring and summer. It is simple to make and very healthy. It's a spinach salad with blueberries, strawberries, mandarin or clementine oranges, chicken, feta cheese and toasted almonds and finished off with

Ingredients

4 c. baby spinach (remove stems, if desired)
1/2 c. fresh blueberries
1/2 c. fresh strawberries
1/2 c. clementine (or mandarin) oranges
2-3 T. feta cheese
2-3 T. slivered almonds
1 large boneless, skinless chicken breast (plus 2-3 t. olive oil, Mrs. Dash's chicken grilling blends seasoning, salt, and pepper)

Dressing:
1/4 c. olive oil
1 T. balsamic vinegar
1/2 t. Dijon mustard
1/2 t. honey
Optional: squeeze of lemon, Mrs. Dash's chicken grilling blends seasoning, salt

Wash, drain and dry the fruits and spinach. If spinach is wet, it won't absorb the dressing.

Wash and remove strawberry stems; slice. Remove clementine skins, then separate into sections. (or use mandarin oranges and drain)

Sprinkle both sides of the chicken with salt, pepper, and Mrs. Dash chicken grilling blends, to taste.

Lightly coat skillet with 2 - 3 t. olive oil.

Preheat skillet over medium-high heat until hot; place chicken in the skillet; reduce heat to medium; cook until meat is no longer pink and the juices run clear, about 8 - 12 minutes.

As chicken cooks, turn it occasionally to brown evenly. If it starts to brown too quickly, reduce heat to medium-low.

Meanwhile, combine all dressing ingredients into an airtight jar. Add optional ingredients, to taste. Shake until well combined.

Toss the dressing with the spinach; add in the fruit and feta cheese; toss. If desired, squeeze a little fresh lemon juice over the salad.

Toast the almonds in a small, dry skillet over medium heat 1-2 minutes, stirring constantly. Add the almonds to the salad.

When chicken is finished, remove from heat; slice or chop. Let it cool; add to the salad.

Divide the salad onto 2 dishes. Serve immediately.

**If not serving immediately, DON'T toss with the dressing or feta cheese.
