This rich chicken salad was created in the 1950's for the cafe menu at Neiman Marcus department stores. It has a secret ingredient that gives the texture of the salad a wonderfully creamy texture. This ingredient is freshly whipped cream folded into the c
1 lb. cooked chicken breasts, cut into 1⁄2 inch cubes (or rotisserie chicken)
1 c. mayonnaise (light, if you prefer)
1 c. thinly sliced/diced celery
1 c. halved purple grapes
1⁄2 c. sliced almonds, toasted plus more for garnish, if desired
1 T. finely chopped fresh parsley
1 t. kosher salt, plus more to taste
1⁄2 c. whipped cream
freshly ground black pepper, to taste
In a large bowl, combine chicken, mayonnaise, celery, grapes, almonds, parsley, and salt. Add whipped cream and pepper; fold until well combined.
Serve with crackers, on croissants, or over red or green lettuce leaves.
Makes 6 cups.
