Crockpot Ziti with 3 Cheeses

Description

Make this easy dish for meatless Mondays or just on those days when you want an easy dinner to come home to. It's so simple and good that you will want to add it to your dinner rotation.

Ingredients

1 lb. box ziti noodles, uncooked
15 oz. container low-fat ricotta cheese
2 egg whites or 1 egg
½ c. Parmesan cheese plus ¼ c., divided
½ c. plus 1 c. low-fat mozzarella cheese, divided
½ t. salt
¼ t. pepper
garlic powder, to taste
48 oz. pasta/spaghetti sauce, your favorite
8 fresh basil leaves, thinly sliced or ½ t. dried basil

Place a crockpot liner in the base of the crock for easy clean up; spray the inside with non-stick cooking spray.

Rinse ziti in a colander; set aside.

Combine ricotta, egg whites, ½ c. Parmesan cheese, ½ c. mozzarella cheese, garlic powder, salt and pepper in a bowl; set aside.

Place half of the ziti (about 2½ c.) in the crockpot. Pour 2 c. pasta sauce over the ziti, using a spoon to make sure the ziti and pasta sauce are evenly layered in the bottom of the crockpot.

Layer half of the ricotta mixture in the crockpot by dropping small spoonfuls. Use the back of the spoon to spread an even layer of cheese.

Repeat the ziti, pasta sauce and cheese layers.

Pour the remaining pasta sauce (about 1 c.) evenly over the top.

Cook on Low heat 4-6 hours.

Remove lid; sprinkle 1 c. mozzarella cheese and ¼ c. Parmesan cheese over the top. Cover; let sit about 10 minutes or until cheese has melted.

Garnish with basil. Serve.
