Easy stir-fry.
1 T vegetable oil
15 oz. boneless, skinless chicken breast strips
6 oz. frozen snow peas
2 T bottled chopped garlic
3/4 cup salted cashews
8 oz. sliced water chestnuts, drained
1/4 t. pepper
In a wok or large skillet, heat oil. Add chicken and stir-fry until lightly brown, about 6-8 minutes. Add peas, stir and cook 4 minutes or until heated through. Add garlic, cashews, water chestnuts and pepper. Stir-fry until heated through, about 3 minutes. Serve with steamed rice and soy sauce. 3-4 servings.
