Take your old favorite mac and cheese to a higher level with smoked Gouda cheese. It's just as easy to make, but so much better tasting.
2 rounded c. dry macaroni
2 T. unsalted butter
2 T. all-purpose flour
2 c. whole milk
salt, to taste
freshly ground black pepper, to taste
2 c. grated smoked Gouda cheese, + more for topping
Preheat oven to 350 degrees.
Cook macaroni in well salted boiling water until just al dente, about 7-8 minutes; drain.
Melt butter in a pan; add flour; whisk to combine, and cook about 1 minute, stirring constantly. Add milk; whisk to combine; continue to heat until milk comes to a simmer and is thickened.
Remove pan from heat; stir in cheese; stir until all cheese is incorporated and sauce is smooth. Add salt and pepper, to taste.
Mix pasta with the sauce; pour into a baking dish or individual dishes. Bake about 30 minutes until bubbling throughout.
Sprinkle more cheese on top; place under the broiler until cheese is browned.
