Enjoy your bruschetta, chicken and pasta all in one amazing dish. In 30 minutes, you will have a meal that everyone will love so much, you will add it to your meal rotation.
1 lb. angel hair pasta
1 lb. cherry tomatoes, chopped
1/4 c. plus 1 T. olive oil, divided
4 cloves garlic, minced
1/2 c. fresh basil, torn
kosher salt, to taste
freshly ground black pepper, to taste
3/4 lb. boneless skinless chicken breasts
1 tbsp. Italian seasoning
1/4 c. grated Parmesan
Bring a large pot of well salted water to a boil. Cook angel hair until al dente, about 4 minutes. Drain; return to pot.
While water is getting ready to boil, stir together tomatoes, 1/4 c. olive oil, garlic, and basil in a large bowl; season generously with salt and pepper; set aside for 20 minutes.
Wash chicken, drain and pat dry with paper towels.
In a large skillet over medium-high heat, heat remaining 1 T. olive oil. Add chicken; season with Italian seasoning, salt, and pepper. Cook until no longer pink, about 10 minutes per side. Let rest 5 minutes; slice thinly.
Add tomato mixture and sliced chicken to angel hair; toss.
Top with grated Parmesan and a drizzle of olive oil. Serve.
