Try this amazing recipe the next time that you are craving guacamole. The pineapple pairs well with Mexican food and provides a delicious twist on an old favorite.
3 ripe avocados, peeled and pitted
1 jalapeno, stem and seeds removed, minced, or to taste
1 1/2 c. diced fresh pineapple, plus extra for garnish
1/2 c. finely chopped red onion
1 clove garlic, minced, optional
1 T. freshly squeezed lime juice
1/4 c. fresh cilantro leaves, finely chopped, optional
1/2 t. coarse sea salt
dash of cumin
tortilla chips, for serving
Mash together the avocados, jalapeno, pineapple, onion, lime juice, cilantro, salt, cumin and garlic if using, with a fork until mixed.
Serve immediately. Garnish with fresh pineapple and chopped cilantro. Serve with tortilla chips.
If not serving immediately, cover with plastic wrap that is touching the entire top layer of the guacamole; refrigerate.
