Description
Try this amazing recipe the next time that you are craving guacamole. The pineapple pairs well with Mexican food and provides a delicious twist on an old favorite.
Ingredients
- 3 ripe avocados, peeled and pitted
- 1 jalapeno, stem and seeds removed, minced, or to taste
- 1 1/2 c. diced fresh pineapple, plus extra for garnish
- 1/2 c. finely chopped red onion
- 1 clove garlic, minced, optional
- 1 T. freshly squeezed lime juice
- 1/4 c. fresh cilantro leaves, finely chopped, optional
- 1/2 t. coarse sea salt
- dash of cumin
- tortilla chips, for serving
Steps
- Mash together the avocados, jalapeno, pineapple, onion, lime juice, cilantro, salt, cumin and garlic if using, with a fork until mixed.
- Serve immediately. Garnish with fresh pineapple and chopped cilantro. Serve with tortilla chips.
- If not serving immediately, cover with plastic wrap that is touching the entire top layer of the guacamole; refrigerate.
