This dish might become one of your family's favorite. It is made much like typical tacos, but instead of taco seasonings and cheese, Greek seasonings and feta cheese are substituted. It makes a nice change and a new recipe to add to your meal rotation.
1 lb. 90% lean ground beef (or lean ground turkey)
14-1/2 oz. can diced tomatoes, undrained
2 t. Greek seasoning or more if desired
1/2 t. minced garlic
1/4 t. pepper
2 c. fresh baby spinach
2-1/4 oz. can Kalamata olives, drained and sliced
4-1/2 oz. pkg. taco shells
1/2 c. crumbled feta cheese
1/4 c. chopped red onion
Preheat oven to 300 degrees.
In a large skillet, cook beef over medium heat until no longer pink; drain and discard grease. Stir in tomatoes and seasonings. Bring to a boil; reduce heat; simmer 8-10 minutes or until thickened. Add spinach and olives; cook and stir 2-3 minutes or until spinach is just wilted.
Meanwhile, place taco shells on an un-greased baking sheet; bake 3-5 minutes or until heated through.
Spoon about 1/4 c. beef mixture into each shell. Top with feta cheese and red onion

**To make 1 T. Greek seasoning if you can't purchase it, substitute 1/2 t. each dried oregano, dried marjoram, garlic powder, lemon-pepper seasoning, ground mustard and salt.
