This meal is so delicious, it will be a hit with your family. You will love it too because it is simple to make and can be prepared in about 20 minutes, not including the marinating time. It makes the perfect weeknight meal for busy moms and dads.
Sauce/marinade:
2/3 c. reduced-sodium soy sauce
2/3 c. beef stock/broth
2 T. brown sugar
4 cloves garlic, minced
2 t. minced ginger
1 t. cornstarch
Stir fry:
1 lb. boneless beef sirloin steak, thinly sliced
1 lb. linguini pasta
4 t. canola oil, divided
1 red bell pepper, thinly sliced
1 onion, thinly sliced
2 carrots, sliced into match-sticks
2 c. broccoli florets
1-2 c. cabbage, shredded
sesame seeds, to taste, optional
Combine soy sauce, stock/broth, brown sugar, garlic, and ginger in a small mixing bowl; stir. Place half of this mixture in a gallon-sized zipper style bag, add sliced beef, seal, pressing as much air out as possible); refrigerate for at least 2 hours.
Add cornstarch to the remaining marinade mixture in bowl; stir until smooth; cover; refrigerate until ready to use.
Cook linguini according to package directions, about 9 minutes.
While linguine is cooking, heat 2 t. oil in a large skillet over medium-high heat; add steak slices; discard excess marinade. Stir-fry until just browned; remove steak from skillet; set aside.
Add remaining oil to the skillet; stir-fry peppers, onion, carrots, and broccoli until onions become clear and soft; add cabbage and beef to the skillet; cook until cabbage becomes soft.
When noodles are cooked, drain; toss with beef and vegetable mixture, adding in the reserved sauce mixture. Toss until noodles are coated in sauce.
Garnish with sesame seeds, if desired. Serve immediately.
