These meatballs are truly special. They are covered in a biscuit with spaghetti sauce and cheese, with drizzled in a wonderful buttery garlic sauce and baked to perfection. You can use leftover meatballs, freshly made meatballs or even thawed, frozen meat
12 oz. can Pillsbury Homestyle Butter Tastin' refrigerated biscuits
8 cooked Italian-style meatballs (if using frozen, let thaw completely)
1 c. marinara/spaghetti sauce and more for dipping
1 c. shredded Italian blend cheese
4 T. butter, melted
2-3 garlic cloves, minced
1/2 t. Italian seasoning
pinch of salt
Preheat oven to 350 degrees. Line a baking sheet with parchment paper or a silicone baking mat. Set aside.
Using your hands or a rolling pin, flatten each biscuit into a 4 inch round.
Place 1 meatball and 2 T. sauce in center of each round; top with 2 T. cheese. Wrap dough around meatball and cheese, pressing edges to seal. Place seam side down on prepared baking sheet, leaving room for spreading. Repeat until all biscuits and meatballs have been finished.
In a small bowl, whisk together melted butter, garlic, Italian seasoning and salt; evenly spoon on top of each biscuit.
Bake 18 - 20 minutes, or until golden brown. Serve hot.
Makes 8.
**If desired, have a little warmed spaghetti/marinara sauce on the side for dipping.
