Hungry for a little something different for breakfast? This meal is easy and quick to make and will definitely satisfy your hunger. It's similar to a grilled cheese and an egg McMuffin, without the muffin.
2-3 eggs
2 T. milk
salt and pepper, to taste
3 t. butter, divided
4 slices whole wheat bread, white or your favorite
4 slices Colby-Jack cheese
4 slices crispy cooked bacon, 2 sausage patties or Canadian bacon
In a medium bowl, beat eggs, milk, salt and pepper until blended.
Heat 1 t. butter in a large non-stick skillet over medium heat; pour in the egg mixture. As eggs begin to set, gently pull them across the pan with a spatula, forming large curds. Continue cooking while pulling and folding the eggs until thickened and no and visible liquid egg remains. Don't overcook. Remove eggs from the pan, set aside.
Clean the skillet; heat skillet to medium heat.
Spread the remaining butter evenly on one side of each slice of bread. Place 2 slices in the skillet, butter side down. Top each with 1 cheese slice, scrambled eggs, crisp bacon, and another cheese slice. Top with the remaining bread slices, buttered side up.
Cook sandwiches over medium heat, until browned on the bottom. When browned on the bottom, flip them over and cook until browned on the second side. The cheese should be melted.
Makes 2 sandwiches.
