Everyone has 20 minutes to make dinner, right? So make this yummy chicken with bacon, BBQ sauce, and cheese topped off with tomato and green onion. Mmmmmm.
4 boneless, skinless chicken breasts
8 bacon slices
½ c. chicken stock
4 T. BBQ sauce
4 oz. Colby Jack cheese, shredded
salt, to taste
freshly ground black pepper, to taste
1 tomato, washed and diced
2 green onions, washed, ends trimmed off and sliced
Wash chicken and pat dry with paper towels.
Fry bacon in a large skillet until crispy.
While bacon is frying, pound chicken to desired thickness. The thinner the chicken, the less cooking time required. Season with salt and pepper, if desired.
Remove bacon from skillet; drain on a plate lined with paper towels.
Turn heat up to medium-high; brown chicken in the bacon grease on both sides, 2 - 3 minutes per side. Pour chicken stock over the chicken; place lid on the skillet; cook until chicken is done, about 4 - 5 minutes, depending on the thickness of the chicken.
Preheat broiler.
Turn off heat; spread 1 T. BBQ sauce on top of each chicken breast; top each breast with 2 bacon slices. Evenly divide cheese on the chicken breasts.
Place under the broiler for 30 seconds to 1 minute, just until cheese is fully melted.
Top with tomato and green onions. Serve hot.
