Hungry for roast but it is difficult with your schedule to make? Make this flavorful pot roast on a bed of onions and let the slow cooker do the rest of the work. For more flavor, brown the roast in an oiled pan and then move it to the slow cooker. Serve
non-stick cooking spray
2 1/2 lb. boneless beef chuck roast
1 yellow onion, sliced
5 washed and peeled carrots, whole
1 gravy mix packet
1 Ranch dressing packet
1 Italian dressing mix packet
1/2 c. white wine, beer or beef stock
salt, to taste
black pepper, to taste
garlic powder, to taste
Line a slow cooker with a slow cooker liner for easy clean up. Coat the inside of the liner with non-stick cooking spray.
Spread the onion slices on the bottom of the slow cooker.
Pat the roast dry with paper towels; generously season it with salt, pepper and garlic powder. Coat the roast in the flour; pound the flour into the roast with a plate. (Season the flour as well for extra flavor.)
Place the coated and seasoned roast in the slow cooker.
In a small bowl, stir together the gravy, Ranch and Italian dressings; stir in your choice of 1/2 c. white wine, beer or beef broth. Pour this mixture into the slow cooker over the roast; add in the carrots.
Set the slow cooker to Low;cook 8 hours or until the meat is tender and the gravy thickens.
