Get that great rotisserie flavored chicken without the rotisserie. It's more economical than buying store bought rotisserie chicken and you know all of the ingredients used to make it.
4 -5 lb. whole roasting chicken
3 t. kosher salt, or to taste
1 t. smoked or regular paprika
1 t. onion powder
1⁄2 t. dried thyme
1 t. Italian seasoning
1⁄2 t. cayenne pepper, optional
1⁄2 t. freshly ground black pepper
6 whole garlic cloves
1 large yellow onion, quartered
Wash chicken and pat dry with paper towels.
Line the crock of the slow cooker with a slow cooker liner; spray the inside of the liner with non-stick cooking spray.
Combine all dry ingredients; rub these dry ingredients all over the chicken, inside and out.
Place half of the onion and garlic in the base of the slow cooker. Place the remaining onion and garlic inside the chicken cavity; place the chicken on top, breast side down, in the slow cooker.
DO NOT ADD ANY WATER!
Cook on High 4-5 hours or on Low 8 hours.
The chicken should be so tender it will fall off the bone. Carefully remove from the slow cooker onto a platter. Serve.
